1. Growing

Our macadamia nuts begin with dedicated growers, cultivating trees under optimal conditions, ensuring the best quality nuts reach us.

2. Harvesting

Ripe nuts, meticulously tended by our dedicated growers, are harvested at peak freshness, ensuring superior quality.

3. Sampling

Samples are taken to evaluate quality and moisture content, crucial for determining fair compensation to our dedicated growers.

4. Curing

Nuts undergo our specialized curing process, preserving flavors and nutrients while maintaining optimal moisture levels in each nut.

5. Cracking

During cracking, a series of processes, including sizing graders, separate shells from kernels, getting them ready for the sorting process.

6. Sorting

Kernels are sorted by size using sizing graders and electronic color sorters, ensuring only the finest nuts proceed to manual inspection.

7. Testing

Curing vs Drying

What’s the Difference?

At Mac Masters International, we use curing, not drying, to process our macadamia nuts. Here’s why:

Curing: Preserving Natural Goodness Curing involves a gentle balance of controlled airflow and temperature over a few days. This method preserves the nuts’ natural flavor, texture, and nutrition, resulting in a superior product.

Drying: Quick, But Compromised Drying uses heat to quickly remove moisture, but it can damage the nuts and reduce quality, affecting taste and texture.
